Pumpkin Bar Recipe

Some people might freak out the day Starbucks releases PSL's. But not this lady. To me fall can officially begin when I've made some pumpkin bars. But to my surprise, I realized I never saved the recipe from year to year. I only used whatever random recipe I found online. Honestly, I felt a little ashamed. So I went digging through my dusty old cookbooks. To my delight, I found a recipe in an old family cookbook. To my extra delight, it tasted good! So i'm sharing it with all of you!

RECIPE

2 C. flour

2 C. sugar

4 eggs (slightly beaten)

2 C. pumpkin puree (or a 15 oz can)

1 C oil

2 tsp. baking powder

1 tsp. baking soda

1/2 tsp salt

2 tsp. cinnamon


FROSTING

3 oz. cream cheese

3/4 stick butter

1 tsp. milk

1 tsp. vanilla

1 3/4 C. powdered sugar


Combine dry ingredients. Lightly beat eggs then add to the dry ingredients. Add pumpkin and oil. Mix well. Pour into a greased and floured 9x13 pan. Bake 20-25 minutes. (My oven actually took closer to 35-40 minutes)


Let bars cool.


Combine all frosting ingredients. Mix with hand mixer. If it's too thick add more milk one teaspoon at a time. (it's really hard to correct frosting you've made too thin)


Let child frost. But lick one of the beaters yourself. :)
